My grandma used to make us squirrel gravy when I was a kid we loved it. I still like it from time to time. Just boil your squirrel like you normally do and instead of throwin the water out mix a little of the water with some flower in a cup and add it back to the broth from the squirrel while it is boilin until it get's about the consistancy of a thick soup. Makes a mean squirrel manhattan too......

debone it, soak em in a bowl just covered with water and a tbsp of baking soda over night, then rinse before you cook it. I use to parboil it but it takes some of the flavor out!

The baking soda draws the blood from the meat and tenderizes it at the same time. It doesn't take long to cook off the bone. Don't OVERCOOK it!! Salt and Pepper is all I use fried in a little EVOO. Dip it in any kind of sauce or just eat it!
