Never done it myself... but I am looking to cook up some steaks cut out of back straps... any pointers? Prep/cook/served with?

Yep; pretty easy. Cut in to strips, marinade as desired, put in dehydrator and press the go button. Oh forgot last step, grab some ASAP before daughters steal it all.Bear Kodiak Magnum, Easton XX75 Legacy w/Zwicky's, Great Northern Quiver

I grind mine into hamburger and use a jerky gun to make it into strips. I just use the pre-measured packs of seasonings from Wally World. Then put it in the dehydrator. I cook mine between 6-7 hrs on 160 degrees.

Making some this weekend.
Cutting the strips tonight, soak on sat. and put it in the smoker all day sunday.
Of course I have to tend to the smoker all day Sunday so I get to sit in the barn watch football and drink beer all day. Should be a good weekend.
