I don't know what exactly to call this recipe, I don't even know where it came from, but you'll love it.
1 or 2 back straps
chedar cheese (shreaded)
mushrooms, canned or fres, ye ol Chicken of the Woods is good with this
Brown gravy mix, can or dry packs.
Take your back strap, cut into chops. Cover a with plastic wrap and pound flat with a meat mallet, this is very very important to cover first, if not, meat everywhere! Next take your cuts of meat and bread them in Breadcrumbs. I put some shreaded chedar cheese in with the breadcrumbs. After they are breaded, brown them in a frying pan until crispy, only a few seconds on each side. next place your breaded cuts in a baking dish. I have a pan with a rack in it, this keeps the cuts crispy, but any baking dish will work just as well. Place your cuts in the oven for about 25-30 minutes on 350. I sprinkle some additional chedar cheese on them before baking. Next, prepare your mushroom gravy, like I said, canned or the dry packs. That's it, your done, serve your meat smothered in gravy and mushrooms, this is by far my favorite recipe.
