Here is one that works great with any kind of poultry, i use it for phesants and grouse. take the bird and coat it in olive oil. I like to use garlic salt, pepper, some poultry seasonin, oregano,ect ect. you can use whatever spices you want. Mix all the spices together in a bowl and actually bread the bird with this mixture. i like to put a can in the cavity and keep the bird upright while cooking. cook on a low temp until it's done, every once and a while you can give it a shot of cooking spray to add a little moisture. then for the last few minutes, set it to broil, this makes that spices like a crust. this is easy and really good.
