yeah 7 days seems a bit long. Do you cook or dehydrate your jerky?

I have a smoker bbq and used charcol and cherry wood at 300 degrees. It tastes and smells great.

If you are smoking the meat at 300 you should be fine. most bacteria will be killed by that temp. 7 days is a long time but if the meat was no good you would be very ill and would get that way very fast. as a young boy I went through an echo school and they taught us that most meat that is not exposed to the guts can be eaten for a long time as long as it is cooked all the way through. actually some people age red meats for up to two months at around 40f in a dry place so you should be good to go.

DAY 1: So far all is ok, my wife doesn’t seem to have an equal Librium problem and she’s not quezy and is still able to still complain about me hunting too much, all the money I’ve spent on archery ,the new muzzleloader and UPS stopping by weekly. I’m hoping two more good days and someone besides me can help eat all this.
