Default Venison Jerky Help

HELP!!!Ive made some good jerky but a buddy of mine makes the best I ever had.So I wanted him to show me the way he does his.First I took my meat out of the freezer Tuesday nite and put in the sink over nite,then into the fridge Wednesday nite.Thursday we sliced it up and I used High Mountain jerky cure then back in the fridge.He said he could return the following Thursday and we could smoke it.I said is it going to be ok to let it stay in the fridg that long and he said no problem especially with the cure. Thursday we smoked it,it smelled great when I opened the plastic and it taste wounderful.Yesterday I woke up with a migraine and spit up some bile.Was seven day's too long.It could be from somthing else and I certanley don't want to waste the jerky.Need some help here.I want to eat it again but have reservation's.

yeah 7 days seems a bit long. Do you cook or dehydrate your jerky?

I have a smoker bbq and used charcol and cherry wood at 300 degrees. It tastes and smells great.

That made me hungry got out the meat and got to work only mine did not sit around that long sorry to here about that dont think I would eat it.

If you are smoking the meat at 300 you should be fine. most bacteria will be killed by that temp. 7 days is a long time but if the meat was no good you would be very ill and would get that way very fast. as a young boy I went through an echo school and they taught us that most meat that is not exposed to the guts can be eaten for a long time as long as it is cooked all the way through. actually some people age red meats for up to two months at around 40f in a dry place so you should be good to go.

I was eating it for a day and a half with no issue and it was just that one day and I'm fine. Thanks

Some guy at work was handing out deer jerky and everyone became real real quick???? Asked him where he got his advice and he said 3DShoots.com, from Gator someone???

DAY 1: So far all is ok, my wife doesnít seem to have an equal Librium problem and sheís not quezy and is still able to still complain about me hunting too much, all the money Iíve spent on archery ,the new muzzleloader and UPS stopping by weekly. Iím hoping two more good days and someone besides me can help eat all this.
